Madrasi biryani is one of the most popular and easy-to-cook recipes of Madras. With delicious taste, pleasant aroma and mild flavor, madrasi biryani is really a perfect recipe to be served as main dish for lunch or dinner. Madrasi Biryani Recipe: Required Ingredients
1 kg basmati rice
1 kg chicken (cut into small pieces)
1 1/2 cups of ghee or cooking oil
Milk (as needed)
2 medium-sized tomatoes
1 cup of yogurt
1 bunch of fresh coriander leaves
3 red chilies
5 small cardamoms
A 2 inch piece of ginger (thinly chopped)
5 garlic cloves
3 green chilies
Half bunch of pudina
3 pieces of cinnamon
2 tsp black cumin seeds
Salt to taste
Zafraan or orange food color (as needed)
Madrasi Biryani Recipe: Cooking Instructions
First of all, clean and wash the rice thoroughly and submerge in fresh water.
Add ghee in a pan and heat it over medium flame.
Fry onion till it becomes golden brown and then add whole green chilies.
After some time, add chopped coriander leaves and pudina.
Then add red chili powder, small cardamom, ginger, garlic, cinnamon, black cumin seeds and cloves.
After cooking the spice, add chicken and cook again for about ten minutes while stirring.
Add yogurt and tomatoes and let it cook for few more minutes, stirring occasionally.
When the spice has been cooked well and oil separates, add about 3kg water.
When the water comes to boil, remove excess water from rice and add it into the pan.
Cook rice for some time till the water has been dried.
Mix zafraan or orange food color in little milk and add it into the rice.
Cover the pan with its lid and steam rice for 10-15 minutes.
Delicious Madrasi biryani is ready, transfer it in a serving dish and serve hot with pickle and yogurt chatni.
